Bolgheri Rosso Pievi is a deep ruby red wine with intense aromas of fresh red fruit, violet and cigar box. On the palate fresh red fruit, with balsamical notes, ripened tannins, rich minerality and balance.
Pairing: all kind of meat, ham cheese, fresh and aged. Pasta dishes with rich sauce.
Bolgheri Rosso Pievi marked the beginning of Fabio Motta's life and career as a wine grower. It is full of the Bolgheri terroir he loves: fruit character, soft and juicy. A lot of attention is given to the native Tuscan Sangiovese variety, which lends the wine complexity and lightness.
Each variety is harvested at full ripening by hand in small baskets. It is fermented in wooden barrels of 33 hl size with the natural yeasts only. The cap is pushed down by hand twice a day and in the first days of fermentation I often do delastages to let the must breathe.
The fermentation takes 2 weeks for each variety, after that the wine is blended and passes into 2 and 3 years old barriques where the malolactic fermentation runs naturally and rests for 12 months it is bottled without undergoing any filtration or fining. The bottle is closed with a “extra” quality natural cork from Sardinia.
