Good acidity makes it suitable for everyday consumption and helps its aptitude for ageing.

Cabernet Sauvignon strengthens its structure and Merlot gives it greater smoothness.

Food Match:Nicely paired with stewed meat, shellfish, seasoned cheese, wild boar and polenta.

  • Frank & Serafico have at their disposal grapes coming from different production areas of the Tuscan Maremma. With regard to the white grapes, these vineyards are inside the Maremma Nature Reserve and the countryside of Magliano in Toscana. The soil in these areas contains a high percentage of sand, which is ideal for giving aromas and freshness to the wine. The red grapes come from Morellino di Scansano and Montecucco areas. These are stoney soils and the grapes acquire splendid ageing qualities. Their goal is to express the best of the terroirs of the Maremma, carefully producing wine using grapes having different features and potentialities.
  • Cabernet Franc is the most suitable Bordeaux grape variety to the Maremma terroir. The grapes have been fermented in open top barriques and processed in a purely traditional way. Its delicate vegetal flavors mingle with ripe plum and balmy scents. This wine has ripe tannins, fine and caressing to taste. The acidity, strongly present, makes it suitable for everyday comsumption and helps its aptitude for ageing. Cabernet Sauvignon completes this wine's blending to strengthen its structure along with Merlot, which gives it a greater smoothness".
  • Soil: consisting of stone (galestro) for Cabernets, clay-sandy for Merlot Harvest: hand-harvesting. Time of year: (Merlot) 14th September, (Cabernet Sauvignon and Cabernet Franc) 2nd and 10th October

Frank & Serafico

The Frank & Serafico’s project was born in 2009 when two oenologists, Pier Paolo Pratesi (Serafìco) and Fabrizio Testa (Frank), met and decided to move together in the heart of the “Uccellina National Park” to start an ambitious endeavour: produce in total autonomy their own wines and beers, using the natural ingredients harvested in their estate, and cook delicious foods in the “Farm Pub” using the vegetables grown in their garden.

The “Maremma” is certainly a wonderful land, an alchemic combination of beauty and nature; the ideal ground from where to start this new project, making way for new tracks over an old soil.

Living and working in the heart of the Maremma’s Natural Park has no parallel. A unique place, filled with a rich and varied Mediterranean vegetation, with all sorts of animals roaming free in their natural environment, wild boars, foxes, hares and deer. The climate is also very favourable: in the summer the sea breeze alleviates the intense heat and the evenings and nights are always cool, even during the summer season.

A real paradise with an ancient history.
