The Chardonnay DO Vino de Pago is a bright and intense yellow with hints of green. It is a clean and luminous wine, with white fruit aroma presence together with some honey and pastry notes.
The Chardonnay is unctuous and luscious in the mouth, but always fresh, light, pleasant and with a very long finish.
The production in the winery is Burgundy style: skin maceration before pressing, and fermentation and aging in Frenck oak barrels, half of them new and half one year old. The aging takes place on lees with batonnage (lees stirring). The result is a rounded wine, unctuous and flavoursome in the mouth, but always fresh, light and pleasant, with a long aftertaste, ideal to combine with white meat, fish and cheese.
The Chardonnay DOP Vino de Pago is an aromatic and soft white. Ideal tasting temperature is between 10º and 12ºC. It is the product of a careful process. Harvest in September after full ripening, fermentation in new French oak barrels at controlled temperature and three-month aging with battonage on fine lees in similar barrels. Afterwards, the wine stays in the bottle for at least 6 months.
The vines grow in 1.4 hectares with a production of around 10.000 bottles a year. The first Chardonnay DOP grapevines planted in the estate Dehesa del Carrizal date back to 1997. In spite of being a more common variety in fresh climates, the truth is it has excellently adapted to the particular microclimate from the beginning.
One of the essential factors for this particularly good acclimatization was the stream Carrizal. It flows along the area of the estate where the first Chardonnay vineyards were planted. The stream offers a constant freshness and the vegetation growing in its banks provides the grape with a softer temperature in the summer and allows for an excellent fruit ripening.The production in the winery is Burgundy style: skin maceration before pressing, and fermentation and aging in Frenck oak barrels, half of them new and half one year old. Dehesa del Carrizal is a “Vino de Pago” winery with Protected Designation of Origin (DOP) and belongs to the association “Grandes Pagos de España”.
Dehesa del Carrizal estate is placed in the middle of the Montes de Toledo, near the Cabañeros National Park, between Tajo and Guadiana basins.
Dehesa del Carrizal is a Vino de Pago, the highest category according to Spanish wine law. It is a DOP (Denominación de Origen Protegida – Protected Designation of Origin) reserved for those few wineries and vineyards which carry out the whole process –from the grape to the bottle– within the limits of the Pago or estate. The unique location, soil and climate are the key to obtaining exceptional wines.
According to the Vineyard and Wine Act 24/2003 of July 10th, a pago is “a rural site with particular edaphic and microclimate characteristics which differentiate it from its environment and where wines of singular features and qualities are obtained. Besides, the grape production, the winemaking and the bottling must take place within the pago strictly following the production rules stated by the specific ministerial decree for each pago”.
It defines the exact production process for each of the wines to be approved by the regional and the national authorities and finally by the European Union. Therefore, the pago has the same rank as the Consejo Regulador or regional governing body.
The whole production takes place in the estate under strict quality control standards. It consists of several stages: harvest, transport, cooling, selection and fermentation. The entire process is carried out with the greatest care so that the grape remains intact, ensuring the quality from the vineyard to the deposit.
After fermentation, our wines are ready to be placed in our stock of French oak barrels. They are made by different coopers and possess different toasting levels according to each wine’s individual requirements. There they rest and continue to take shape.
Barrel storage aims at aromatic finesse and tannin power, our wines’ natural allies. Humidity and temperature conditions are always kept under control. Winter cold favours the precipitation of the more unstable components of the wine, while higher summer temperatures accelerate the chemical reactions and allow for the wine to evolve in softness. Every 3 or 4 months we carry out the decanting: we carefully transfer the wine to a different barrel in order to separate the lees sediment from the clean wine. This way the wine gains a significant limpidity by means of a natural decanting process. At Dehesa del Carrizal, a third of our barrel stock is renewed every year.
The different lots fuse together into something superior to the sum of the components. This will take place after the wine is poured into the barrels. Nevertheless, we think about it ever since we start tasting the lots coming from different allotments.
