Ansonica Maremma Toscana is a white dry wine, with an intense hay colour with warm golden nuances. On the nose it shows notes of broom, citrus fruits and herbs from the Mediterranean bush. Dry, round palate with a pleasant freshness, sapidity and a long fruity finish.

Food pairing: perfect with seafood, white meat or fresh and semi-mature cheese.
Serving temperature: 8 – 10 °C

The name Maremma ( from Maretima, that is to say close to the sea) is a large area on the coast of Tuscany and Northern Latium. It goes from the province of Livorno and Pisa (Alta Maremma), has its central and main part in the province of Grosseto where Scansano is also located, and then continues south, to inlcude Maremma Laziale, north of Civitavecchia.

Ansonica Maremma Toscana: from an ancient tradition, a selection of 100% Ansonica grapes.

Vineyards are 90 metres a.s.l. , 15 years old vines grown on sandy, rich in silt soil. The grapes come from a single vineyard that matures early, and are picked when fully ripe are harvested at the end of September.

Fermentation:The grapes are then kept for 7-8 days in a ventilated cell at 10°C. Half of the grapes are destemmed and start the fermentation with the skins; for the other half we use a closed press, with atmosphere saturated with carbon dioxide, where the grapes macerate for 12 hours. Soft pressing follows, to extract only the first pressing must, then the must is left to decant for around 72 hours in a tank at a controlled temperature of around 5-7°C. We then separate the clean must from the decanted part and activate the fermentation with the use of specially selected yeast. The two fermentations continue slowly, at around 15°C, and after about one week we join the two halves: the must resulting from the fermentation of the grapes with the skins is added to the pressed must and they finish the fermentation together, during the two following stages. 1)  Ageing: in steel tanks for three months on fine lees. 2) Bottling: starting from May after the harvest.

Ageing potential: to be drunk young, within 3 years since its harvest.

Cantina Vignaioli Scansano

Cantina Vignaioli del Morellino di Scansano was born in Scansano, in the province of Grosseto, in 1972 and today has 170 members. Our winery’s production is focused on Morellino di Scansano, the most typical wine in the Maremma Toscana region. Thanks to the 700 hectares of vineyards that belong to our members, we can offer multiple facets of Morellino, a proof of its versatility.

“For us it’s essential that all our members take part in the process, that they feel part of a large team. Over the past few years, our members have adopted strict rules so as to improve the quality of our wines starting from the vineyard. This has increased each one’s participation.

We’re also proud to have many young people among our membrs. Some have followed their parents’ steps, some have gone back to farming. This makes us proud: it shows our mission of supporting our territory through our work is accomplished. But then, of course, there’s always space for improvement.”

Maremma has the charm of a place of discovery and conquest, a place that has been spared by the extensive urbanisation that is characterising many other agricultural territories. The poverty that characterised this area until the Fifties – when reclamation of the land was finally completed and Maremma stopped being a land of poverty and emigration with its swamplands close to the sea – has led to a still untouched countryside that spreads in front of your enchanted eyes. Indeed, until relatively recently, the Maremma region was divided into a coastal area with swamplands and a hilly and drier area inland, with small villages such as Scansano on the hilltops.

    The aromas do transport you to a hot summers day in southern coastal Tuscany. Heady, perfumed and herbal aromas. Finish is dry and layered. I was interested that the White Fox team pared this with a roasted onion risotto. I can now see why. Good wine
